Raw Thyroid comes from bovine (cattle) body parts. It is a combination of cow thyroid, adrenal, pituitary, and thymus glands, plus parts of their spleen, with added Kelp which has iodine that is a known thyroid stimulant.

Dessicated Thyroid, like Armour, comes from pig thyroid. There is a debate as to which is best because everyone reacts differently to the ingredients contained in each. Some people have allergies to certain additives, while others may not.
